This is a quick meal suggestion that doesn’t sacrifice eating in a healthy way.
1 wholegrain pita bread
1 tomato, sliced
1 table spoon of sliced green onion
4/6 small mozzarella balls
1 table spoon of shrimp (shell and heads off)
1 teaspoon of chopped coriander
A splash of olive oil and vinegar
I used a frozen wholegrain pita pocket bread so the time needed to slightly crisp it is a bit longer. If you have a toaster with an upper heating rack you can use that and flip the bread half-way. Leave on top of the toaster while you mix all other ingredients on a bowl.

Cut the pita in half and fill it with the salad. I like to serve them in bowls because they can stand straight and don’t spill their filling.
