Turkey, Endive and Sage Salad

  • 1 tablespoon of olive oil
  • 250g of turkey meat
  • 200g of boiled potatoes
  • 2 endives, chopped in stripes
  • 1 small onion, peeled and minced
  • 4 sage leafs
  • Salt and black pepper to taste

For the sauce:

  • 100ml of plain unsweetened yogurt
  • 1 pinch of salt
  • Juice of 1/2 lemon
  • 1/2 tablespoon of a good mayonnaise
  • 1 tablespoon of chopped chives
  1. Heat a nonsticking pan and add the olive oil, minced onion, turkey, onions and 2 leafs of sage.
  2. Cook till the turkey and potatoes start to caramelise, turning in order to avoid burning.
  3. Reserve.
  4. Carefully fry the other 2 sage leafs in the juices in the pan. Take them when done and reserve.
  5. Make the sauce by combining the ingredientes.
  6. Make a bed of endives, cover with the turkey, potato and onion mix.
  7. Pour the sauce, add the sage leafs and sprinkle with chives.
