Tomato and Bean soup

  • 800g of ripe tomatoes, diced
  • 2 celery ribes, sliced
  • 2 carrots, peeled and diced
  • 1 medium onion, peeled and minced
  • 230g of cooked lima beans
  • 1 bayleaf
  • 500ml of hot water
  • 1 pinch of thyme
  • 1 pinch of salt
  • 2 cloves of garlic, peeled and minced
  • 1 tablespoon of extra virgin olive oil
  1. Sauté the onion in the olive oil until soft.
  2. Add the tomatoes, celery, carrots and bayleaf.
  3. Let them cook till the tomatoes are very soft.
  4. Discard the bay leaf, add water, garlic, the lima beans and thyme.
  5. Cook till all vegetables are soft.
  6. Puré using a hand blender.
  7. Taste and add sal to your taste.
  8. Serve with a dollop of plain yogurt and sprinkle with thyme or your favourite herb.
