- 800g of ripe tomatoes, diced
- 2 celery ribes, sliced
- 2 carrots, peeled and diced
- 1 medium onion, peeled and minced
- 230g of cooked lima beans
- 1 bayleaf
- 500ml of hot water
- 1 pinch of thyme
- 1 pinch of salt
- 2 cloves of garlic, peeled and minced
- 1 tablespoon of extra virgin olive oil
- Sauté the onion in the olive oil until soft.
- Add the tomatoes, celery, carrots and bayleaf.
- Let them cook till the tomatoes are very soft.
- Discard the bay leaf, add water, garlic, the lima beans and thyme.
- Cook till all vegetables are soft.
- Puré using a hand blender.
- Taste and add sal to your taste.
- Serve with a dollop of plain yogurt and sprinkle with thyme or your favourite herb.
