Sweetheart Cabbage, Carrot, Lentils and Zucchini soup

After a bowl of this soup I feel comforted and warm. Carrots, celery, lentils and sweetheart cabbage combined into a creamy and satisfying soup. Delicious!

Ingredients: 

  • 600 g  sweetheart cabbage, cut in julienne
  • 2 celery ribs, sliced
  • ​​1 kg carrots, peeled and diced
  • 1 medium onion, peeled and cut in quarters
  • 5 cloves garlic, peeled
  • 1 large zucchini, peeled and diced
  • 150 g lentils
  • 1 chayote, peeled and diced
  • 3 sprigs of thyme
  • Salt to taste
  1. Cook the sweetheart cabbage in a pot with a little water.
  2. Place in a large pot carrots, zucchini, onion, garlic, celery, chayote and lentils.
  3. Cover with water and cook until all vegetables are tender
  4. Season with thyme and salt.
  5. Blend the soup til creamy.
  6. Add the cooked cabbage and stir to mix.
