After a bowl of this soup I feel comforted and warm. Carrots, celery, lentils and sweetheart cabbage combined into a creamy and satisfying soup. Delicious!
Ingredients:
- 600 g sweetheart cabbage, cut in julienne
- 2 celery ribs, sliced
- 1 kg carrots, peeled and diced
- 1 medium onion, peeled and cut in quarters
- 5 cloves garlic, peeled
- 1 large zucchini, peeled and diced
- 150 g lentils
- 1 chayote, peeled and diced
- 3 sprigs of thyme
- Salt to taste
- Cook the sweetheart cabbage in a pot with a little water.
- Place in a large pot carrots, zucchini, onion, garlic, celery, chayote and lentils.
- Cover with water and cook until all vegetables are tender
- Season with thyme and salt.
- Blend the soup til creamy.
- Add the cooked cabbage and stir to mix.
