Sugar free Blackberry and Nectarine Koldskål

Recipe:

Ingredients:

  • 1 cup unsweetened almond milk
  • 1 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon Stevia powder (or more to taste)
  • 1 nectarine, cut into small pieces
  • 5-6 blackberries
  • A handful of fresh mint leaves

Instructions:

  1. In a bowl, whisk together almond milk, Greek yogurt, vanilla extract, and Stevia powder until the mixture is smooth.
  2. Thinly slice the nectarine and set aside a handful of small pieces for garnish.
  3. Add the rest of the nectarine slices and blackberries to the mixture and stir. Refrigerate the mixture for at least 1 hour or overnight.
  4. Before serving, cut the remaining nectarine slices and scoop the chilled koldskål into bowls.
  5. Top the koldskål with the nectarine slices, blackberries, and fresh mint leaves. Serve and enjoy!

This sugar-free version of the traditional Danish dessert is made with Stevia powder as a healthier alternative to honey. The combination of blackberries, nectarines, and mint leaves creates a refreshing and sweet flavor perfect for any occasion.
