- 1 bunch of asparagus, peeled and cut in quarters
- 1/4 of thinly sliced red pepper
- 1 Spring onion, sliced
- 3 slices of low fat bacon, cut in thin pieces
- 1 tablespoon 0f cooking oil
- salt and black pepper to taste
- Place a wok over medium heat to saute the vegetables and bacon.
- Start with the cooking oil, bacon and white part of the Spring onion.
- When the bacon is starting to brown add the other ingredients and cook them till tender.
- Serve with scrambled eggs
- Sprinkle with the green part of the Spring onion
Serve with a salad and a slice of toasted bread.
