Sautee Asparagus with chives and bacon

  • 1 bunch of asparagus, peeled and cut in quarters
  • 1/4 of thinly sliced red pepper
  • 1 Spring onion, sliced
  • 3 slices of low fat bacon, cut in thin pieces
  • 1 tablespoon 0f cooking oil
  • salt and black pepper to taste

 

  1. Place a wok over medium heat to saute the vegetables and bacon.
  2. Start with the cooking oil, bacon and white part of the Spring onion.
  3. When the bacon is starting to brown add the other ingredients and cook them till tender.
  4. Serve with scrambled eggs
  5. Sprinkle with the green part of the Spring onion

Serve with a salad and a slice of toasted bread.
