This is a very tasty and easy soup to make. It is potato and gluten free.
Ingredients:
- 600 g of butternut squash, peeled and diced
- 400 g of cooked white beans
- 2 shallots
- 2 garlic cloves
- 3 sage leafs
- 1 table-spoon of olive oil
- 1 lt of beef stock or vegetable stock
- salt to taste
- Cover a tray with parchment paper and place the diced pumpkin, shallots and garlic cloves (peel on) on it.
- Drizzle with olive oil, and roast till tender
- Peel the shallots and garlic, add the roasted pumpkin, cooked white beans, sage, stock, salt and blend till smooth.
- Taste and rectify if necessary.
