Roasted Pumpkin and white Beans soup

This is a very tasty and easy soup to make. It is potato and gluten free.

Ingredients:

  • 600 g of butternut squash, peeled and diced
  • 400 g of cooked white beans
  • 2 shallots
  • 2 garlic cloves
  • 3 sage leafs
  • 1 table-spoon of olive oil
  • 1 lt of beef stock or vegetable stock
  • salt to taste
  1. Cover a tray with parchment paper and place the diced pumpkin, shallots and garlic cloves (peel on) on it.
  2. Drizzle with olive oil,  and roast till tender
  3. Peel the shallots and garlic, add the roasted pumpkin, cooked white beans, sage, stock, salt and blend till smooth.
  4. Taste and rectify if necessary.
