Pear with Riccota in Cocoa and Almond Soil

Pear and cocoa make a delicious and classic combination. In this sugar-free version I added  walnuts and almonds to make it even tastier.

  • 1  Williams pear
  • 2 teaspoons of ricotta cheese
  • 1/2 teaspoon nonfat  sugar-free cocoa powder
  • 1/2 teaspoon of sweetener
  • 1 Short cake cookie, sugar free, if you can find it
  • 1 lemon
  • 4 almonds with skin on
  • 2 walnuts
  1. To make the soil place the cookie, cocoa, almonds and sweetener in a food  processor and chop coarsely.
  2. Cut the pear in half, remove the core with a teaspoon.
  3. Drizzle pear with lemon juice to not oxidize
  4. Fill the pear halves with ricotta and place half walnut on top
  5. Sprinkle a plate with soil and arrange the pear halves on top of the soil.
