Meatballs with Asparagus

This is an ideia on how to make dinner in a healthy, very easy and fast way.
I used frozen carrots, potatoes and meatballs. Some leftover Danbo cheese and 1/2 a bunch of fresh asparagus. Let the oven make the cooking while you enjoy doing something else.

If you don’t have Danbo cheese Emmenthal or Gouda will be also great choices.

Pre-heat the oven at 200C.

Spray some olive oil on an oven tray, sprinkle a pinch of sea salt and a pinch of grounded pepper. Add thyme, cover with the carrots, meatballs and potatoes.

Cover the meatballs with the asparagus and cheese. This will help to keep them from drying. Bake till the potatoes are done.
