Coffee Porridge with Almonds and Blueberries

If crave for coffee in the morning and want a low cal breakfast this is a great alternative. If you prefer you can make this dish with toasted cereals if coffee isn’t your cup of tea.  This is healthy comfort food. One bowl, fast, easy meal to start your day. 

At age 49 I’m back to school, after earning a scholarship, so I’m in a hurry in the morning, but due to my diabetes I can’t skip meals or over eat. I have a schedule for insulin and other medication. This is 24/7, 365 days. My goal is to be stable so I can live my life as any other person. I hope this opportunity will give me a chance of going back to the job market.

Ingredients:

  • 20 g of wholemeal oats
  • 150 ml of milk of your choice
  • 1 teaspoon of coffee
  • 1 teaspoon of sweetener
  • 1 tablespoon of almonds
  • 2 tablespoons of blueberries
  1. Mix the oats, milk, coffee, sweetener and almonds in a medium size bowl and cook it in the microwave oven at maximum power for 3-4 minutes.
  2. Add the blueberries. If you are using frozen fruit you can defrost them with a hairdryer.
