I love pie, savory or sweet but I don’t know how to make the dough, so I buy it fresh from a supermarket and I am lucky with the quality of the produce I can find in Copenhagen. Made with real butter. I only have to make a delicious filling.
200 g spinach
- 1dash of vinegar
- 300 g of chicken or turkey leftovers
- 150 g of lean bacon
- 1 green onion
- a pinch of garlic powder
- black olives
- 2 sheets of fresh pastry
- cooking spray
- 1 egg
- sauté the spinach in a teaspoon of olive oil, a splash of vinegar, some garlic powder and the chopped green onions
- coat another pan with cooking spray and add the bacon, poultry and cook till brown.
- put one of the pastry sheets inside a pie tin and fill with spinach, cottage cheese, the meat and olives.
- close with the second sheet of pastry and bake it at 170ºC with the fan on for 35 min.
- brush with a egg yolk and bake till golden.
- let it cool for a few minutes before cutting the pie
