Chicken and Sweet-peas in a rainy day

After a few months of dry cold weather it pours and I decided to stay home, were it is warm and dry to try to get better from the cold. On of my main weapons to fight the disease is this dish rich in folic acid, with mint, ginger and  chicken. Did I mention that it is delicious? This is my version of the Portuguese classic “Frango com Ervilhas” (chicken with sweet-peas). 

 

Ingredients:

  • 1 chicken without skin and cut in peaces (if you prefer you can use chicken breast)
  • 1 onion, diced
  • 1 carrot, diced
  • 1 garlic clove, minced
  • 1 minced red chili (remove the seeds to make it milder or leave them if like some heat)
  • 1 sprig of mint
  • 50 g of lean spicy chouriço (similar to chourizo but better). I used “chouriço de Seia”. If you can’t find chouriço you can use lean bacon a litle bit of sweet paprika.
  • 1 rib of celery, sliced
  • 400 g of frozen sweet-peas (use the small ones because they are tender)
  • 100 ml of white wine (I used “Reguengos”. This wine is from the South of Portugal and tastes like ripe fruit but it is balanced).
  • water to cover
  • 1 tablespoon of extra virgin olive oil
  • salt to taste

 

  1. Cover the bottom of a pot with the olive oil, add the onion and chouriço. Let it fry till the onion is translucent.
  2. Add the garlic, carrot and celery. Cook for a minute.
  3. Add the chicken and brown it.
  4. Add the remaining ingredients and let it simmer in low heat.
  5. If don’t mind the calories you can serve toasted bread. I recommend ciabatta.
