- 600g Carrots, peeled and diced
- 150g of Lentils
- 1 Courgette
- 1 medium Onion, peeled and chopped
- 1 Garlic clove, peeled
- 1 sprig of Mint
- 1 small piece of fresh Ginger, peeled
- 1 pinch of Salt.
- Put all the vegetables in a pot, cover with water and let it simmer till they are tender. If you use a yellow courgette our peel a regular one the soup will have an orange color. This is totally optional.
- Add the int leafs.
- Blend to obtain a creamy soup.
- Taste to verify flavour and consistency.
- If needed add more water or salt.
Serve with a leaf of mint and some salted nuts on the side.
