Carrot, Lentils and Ginger soup

  • 600g Carrots, peeled and diced
  • 150g of Lentils
  • 1 Courgette
  • 1 medium Onion, peeled and chopped
  • 1 Garlic clove, peeled
  • 1 sprig of Mint
  • 1 small piece of fresh Ginger, peeled
  • 1 pinch of Salt.
  1. Put all the vegetables in a pot, cover with water and let it simmer till they are tender. If you use a yellow courgette our peel a regular one the soup will have an orange color. This is totally optional.
  2. Add the int leafs.
  3. Blend to obtain a creamy soup.
  4. Taste to verify flavour and consistency.
  5. If needed add more water or salt.

Serve with a leaf of mint and some salted nuts on the side.
