Bare pumpkin soup

When entering the Fall what we do? We cook pumpkin and making soup is what comes more natural to me. I love soup because it is an easy way to eat vegetables, plus it tastes so good. 

  • 1/2 a butternut squash peeled and diced
  • 3 carrots, peeled  and diced
  • 3 cloves of garlic peeled
  • 1 medium onion peeled and diced
  • 4 ribs of celery
  • 1 sprig of mint
  • salt to taste
  • 1 lt of water

 

 

  1. Put all the vegetables and water in a pot and boil in medium heat till soft.
  2. Add the salt
  3. Remove the mint sprig and blend till you get a creamy soup.
