When entering the Fall what we do? We cook pumpkin and making soup is what comes more natural to me. I love soup because it is an easy way to eat vegetables, plus it tastes so good.
- 1/2 a butternut squash peeled and diced
- 3 carrots, peeled and diced
- 3 cloves of garlic peeled
- 1 medium onion peeled and diced
- 4 ribs of celery
- 1 sprig of mint
- salt to taste
- 1 lt of water
- Put all the vegetables and water in a pot and boil in medium heat till soft.
- Add the salt
- Remove the mint sprig and blend till you get a creamy soup.
